Where, then, is the art in cooking? We tend to forget that for most of history, art had a religious motive. An artist before the renaissance had a mission to pay homage to god. No matter what form god took — whether a human face or a spirit — art was a message.

When I talk about art in cooking, I mean that pre-renaissance conception. As a cook and a chef, I’m attempting to convey a message that food is sacred. I’m paying homage to god, to our mother earth, to the life force of this world. To realize this in food, I believe, is when cooking becomes art.
